;D ;D ; D Now you folks down there have to tell me if this is a good recipe.Cowboys are usually hard and grizzled making their meat quite difficult to work with. Special tenderizers are needed. Or a slow crockpot will do the trick. Cowboys usually smoke, so the only recipes we have found to cover the tobacco taste are chili recipes. Lots of onions, garlic, peppers and parsley will get rid of the aftertaste of tobacco in your mouth. Recipe for Cowboy Chili INGREDIENTS * 8 pounds ground cowboy (if a cowboy is not available you can substitute ground chuck.) * 2 (10 ounce) cans diced tomatoes with green chili peppers * 1 large yellow onion, diced * 2 tablespoons garlic powder * 2 tablespoons ground cumin * 2 (1.25 ounce) packages chili seasoning mix * 8 cans pinto beans * 6 cans kidney beans 1. In a large stock pot over high heat, brown ground cowboy on all sides. Reduce heat to medium low and add the diced tomatoes with green chili peppers, yellow onion, garlic powder, ground cumin and chili seasoning mix. Cover and simmer until meat meat is tender. 2. Open 6 cans of cooked pinto beans and 4 cans of kidney beans. Pour into the bubbly mixture of ground cowboy and seasonings. Cook until the beans are heated through. 3. Serve in a bowl and offer a variety of toppings... cheese, onions, diced tomatoes, sour cream. 4. Serve with cornbread on the side. It's also good over rice.
